Edam And Bean Wraps

Ingredients

  • Servings: 6
  • 1 pepper
  • 420 g beans
  • 160 g sweetcorn
  • 6 tablespoons salsa
  • 6 tortillas
  • 125 g lettuce
  • 125 g edam cheese
  • 6 tablespoons yoghurt

Recipe

  • 1 deseed and dice the pepper, drain and rinse the beans. in a bowl, mix them with the sweetcorn and salsa.
  • 2 arrange some of the lettuce over the base of a tortilla. spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of edam. spoon 1 tbsp yoghurt on top.
  • 3 carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal. repeat with the remaining tortillas and filling.
