Edam And Bean Wraps

Ingredients
- Servings: 6
- 1 pepper
- 420 g beans
- 160 g sweetcorn
- 6 tablespoons salsa
- 6 tortillas
- 125 g lettuce
- 125 g edam cheese
- 6 tablespoons yoghurt
Recipe
- 1 deseed and dice the pepper, drain and rinse the beans. in a bowl, mix them with the sweetcorn and salsa.
- 2 arrange some of the lettuce over the base of a tortilla. spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of edam. spoon 1 tbsp yoghurt on top.
- 3 carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal. repeat with the remaining tortillas and filling.
