Ingredients

- 6 chayotes (also known as meletons or mirletons)
- 1/2 teaspoon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup extra virgin olive oil
Recipe
- 1 boil chayotes until tender, 10-15 minutes. remove from heat and cut into 1" cubes.
- 2 mix the rest of ingredients and pour over cubed chayote.
- 3 place in refrigerator for about 1 hour.
- 4 serve over lettuce. enjoy!
