Cuban Chayote Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 6 chayotes (also known as meletons or mirletons)
  • 1/2 teaspoon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra virgin olive oil

Recipe

  • 1 boil chayotes until tender, 10-15 minutes. remove from heat and cut into 1" cubes.
  • 2 mix the rest of ingredients and pour over cubed chayote.
  • 3 place in refrigerator for about 1 hour.
  • 4 serve over lettuce. enjoy!
