Clayudas

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 tablespoon canola oil
  • 1 small onion, diced (1 cup)
  • 1 garlic clove, minced (1 tsp.)
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (4 ounce) can chipotle chiles in adobo, drained
  • 1/2 teaspoon brown sugar
  • 32 inches flour tortillas
  • 8 ounces coleslaw mix
  • 1/2 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Recipe

  • 1 preheat oven to 450°f
  • 2 heat oil in saucepan over medium-high heat.
  • 3 add onion, and cook 5 minutes, or until translucent.
  • 4 add garlic and cumin, and cook 1 minute more.
  • 5 place onion mixture in blender with beans, chipotle chile, brown sugar, and 3 tbs. water.
  • 6 blend until smooth.
  • 7 season with salt and pepper.
  • 8 place 2 tortillas each on 2 baking sheets.
  • 9 spread bean mixture on tortillas, and bake 5 to 7 minutes, or until edges become golden.
  • 10 toss slaw in bowl with cilantro and lime juice.
  • 11 season with salt and pepper.
  • 12 top each clayuda with slaw, and cut into triangles.
