Goat Cheese And Bean Bruschetta

Ingredients
- 1 (15 1/2 ounce) can beans, rinsed and drained
- 5 plum tomatoes, seeded and coarsely chopped
- 1/2 cup onion, minced
- 1/2 cup basil, fresh, chopped
- 3 garlic cloves, minced
- 1 1/2 tablespoons balsamic vinegar
- 4 tablespoons olive oil
- pepper
- 1 loaf italian bread or 1 loaf french baguette, cut into 1/2 thick slices
- 6 ounces mild goat cheese, softened
Recipe
- 1 preheat oven to 375 degree fahrenheit.
- 2 in a medium sized mixing bowl, combine the beans, tomatoes, basil, garlic, vinegar and 2 tbsps olive oil. season with pepper to taste.
- 3 place bread on large baking sheet and brush with pastry brush using the remaining oil. bake, watching closely, until bread is toasted and golden brown, about 8 to 10 minutes.
- 4 remove bread from the oven and spread the softened goat cheese over each slice. top with tomato bean mixture.
- 5 serve immediately.
