Greek Wraps And Bean Spread

Ingredients

  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 2 sprigs fresh rosemary
  • 1 garlic clove
  • olive oil
  • 2 tomatoes
  • 1/4 seedless cucumber
  • 1/4 cup red onion, chopped
  • 1/3 cup kalamata olive
  • flat leaf parsley
  • 1/4 cup lemon juice
  • 4 pita bread or 4 tortillas
  • feta cheese

Recipe

  • 1 combine beans, rosemary, galic, olive oil and salt and pepper in a food processor. pulse until smooth.
  • 2 combine tomatoes, cumcumber, onion, olives, parsley, and lemon juice in a bowl. drizzle with olive oil and season with salt and pepper.
  • 3 warm pitas or tortillas. spread with bean spread and top with a layer of the greek salad. top with feta. fold up and enjoy.
