Escarole And Beans

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1 (15 ounce) can progresso cannellini beans
  • 4 cups chicken broth
  • 1 bunch escarole, cooked (steam it for 3 minutes)
  • salt and pepper
  • freshly grated parmigiano-reggiano cheese

Recipe

  • 1 heat oil over medium heat.
  • 2 add garlic and saute for 2 minutes until golden brown.
  • 3 stir in the beans and their liquid.
  • 4 add the broth, escarole, salt and pepper.
  • 5 lower the heat and cook for about 10 minutes or until hot.
  • 6 top with grated cheese.
