Greek Chili

Ingredients

- 1 lb ground turkey
- 1 teaspoon olive oil
- 1 large onion
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1/2 teaspoon dried thyme
- 2 bay leaves
- 1/2 teaspoon black pepper
- 1 (15 ounce) stewed tomatoes
- 1 (15 ounce) diced tomatoes
- 1 (15 ounce) artichoke hearts (not marinated)
- 1 (15 ounce) chickpeas or 1 (15 ounce) garbanzo beans
- 1 (8 ounce) can black olives (sliced or chopped)
- crumbled feta
Recipe
- 1 in a soup pot, heat oil and add chopped onion and turkey.
- 2 brown meat.
- 3 add garlic, oregano, thyme, bay leaves and pepper.
- 4 cook 1 minute or so.
- 5 add tomatoes with juice, drained chickpeas, drained olives and chopped artichoke hearts.
- 6 stir well.
- 7 simmer for about one hour.
- 8 serve with feta sprinkled on top.
