No Meat "meatloaf" (lentil Loaf)

Ingredients

- 2 cups dry lentils
- 2 eggs
- 1/3 cup ketchup
- 1/4 cup barbecue sauce
- 2 teaspoons dijon mustard
- 1/2 cup rolled oats
- 2 tablespoons parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
Recipe
- 1 in a large pot, bring lentils to a boil with enough water to cover by a couple inches. reduce heat, and simmer for 30-40 minutes or until very soft. drain.
- 2 meanwhile, whisk the rest of the ingredients together until combined.
- 3 puree lentils in a food prosesser until smooth. dump that into the egg mixture, and stir. pour into a greased 8x8 baking dish, and bake at 400 for 30 minutes or until firm.
- 4 enjoy.
