No Meat "meatloaf" (lentil Loaf)

Ingredients

  • Servings: 8
  • 2 cups dry lentils
  • 2 eggs
  • 1/3 cup ketchup
  • 1/4 cup barbecue sauce
  • 2 teaspoons dijon mustard
  • 1/2 cup rolled oats
  • 2 tablespoons parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley

Recipe

  • 1 in a large pot, bring lentils to a boil with enough water to cover by a couple inches. reduce heat, and simmer for 30-40 minutes or until very soft. drain.
  • 2 meanwhile, whisk the rest of the ingredients together until combined.
  • 3 puree lentils in a food prosesser until smooth. dump that into the egg mixture, and stir. pour into a greased 8x8 baking dish, and bake at 400 for 30 minutes or until firm.
  • 4 enjoy.
