Kale With Smoked Sausage Soup - Slow Cooker

Total Time: 8 hrs 45 mins Preparation Time: 15 mins Cook Time: 8 hrs 30 mins

Ingredients

  • Servings: 6
  • 2 slices bacon
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon hot pepper flakes (more if you like heat)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 2 tablespoons vinegar
  • 8 cups chicken broth
  • 1 (19 ounce) can kidney beans
  • 1 lb kale
  • 1 lb kielbasa, cut into bite sized pieces (any smoked cooked sausage will do)

Recipe

  • 1 cook bacon in skillet till crisp.
  • 2 drain, crumble, set aside.
  • 3 add onions to pan.
  • 4 cook till softened.
  • 5 add garlic, pepper flakes, oregano, salt, and pepper.
  • 6 cook 1 minute.
  • 7 stir in vinegar.
  • 8 transfer to slow cooker.
  • 9 add broth, beans and kale cook on low for 8 hours.
  • 10 stir in sausage and reserved bacon.
  • 11 cook another 30 min on high till heated.
