Hobo Spuds-(wisconsin Style)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons lard or 2 tablespoons crisco
  • 1 (12 ounce) can spam
  • 2 (15 ounce) cans whole potatoes
  • 4 slices cheese
  • 1 small onion (optional)

Recipe

  • 1 slice spam in half, slice into length strips about 1/4" square x 2".
  • 2 build fire so you have hot coals, add lard to fry pan until sizzles, add spam, brown spam until dark brown or jumps around in pan like "mexican jumping beans", drain and set aside.
  • 3 add drained whole potatoes that have been partially crumbled in the can.
  • 4 fry until golden brown on both sides. add spam back onto potatoes.
  • 5 chop the onion, add on top potatoes and spam, cover with cheese. cover and let set by fire for a few minutes to melt the cheese.
