Corn & Black Bean Salsa/dip

Ingredients

- 1 (15 ounce) can whole kernel corn, drained
- 1 (16 ounce) can black beans, rinsed & drained
- 2 large tomatoes, seeded & diced
- 1 medium red onion, chopped
- 1/4 cup minced fresh cilantro
- 2 garlic cloves, minced
- 2 tablespoons sugar
- 2 tablespoons vinegar
- 2 tablespoons canola oil
- 1 1/2 teaspoons lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground pepper
Recipe
- 1 mix corn, beans, tomatoes, onions, & cilantro in large bowl.
- 2 in separate bowl mix garlic, sugar, vinegar oil, lime juice, salt, cumin & pepper.
- 3 approximately 1 hour before serving mix dressing with veggies and refrigerate. serve with tortilla scoops.
- 4 veggies can be prepared the day before, just keep the onions seperate & the dressing separate.
