Corn & Black Bean Salsa/dip

Ingredients

  • Servings: 20
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (16 ounce) can black beans, rinsed & drained
  • 2 large tomatoes, seeded & diced
  • 1 medium red onion, chopped
  • 1/4 cup minced fresh cilantro
  • 2 garlic cloves, minced
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 2 tablespoons canola oil
  • 1 1/2 teaspoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground pepper

Recipe

  • 1 mix corn, beans, tomatoes, onions, & cilantro in large bowl.
  • 2 in separate bowl mix garlic, sugar, vinegar oil, lime juice, salt, cumin & pepper.
  • 3 approximately 1 hour before serving mix dressing with veggies and refrigerate. serve with tortilla scoops.
  • 4 veggies can be prepared the day before, just keep the onions seperate & the dressing separate.
