Light Edamame Hummus

Ingredients

  • Servings: 4
  • 1 cup edamame, shelled
  • 1/4 cup low-fat mayonnaise
  • 1/4 cup low-fat plain yogurt
  • 2 teaspoons lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon coriander, coarsely chopped
  • salt and pepper

Recipe

  • 1 place edamame, mayonnaise, yogurt, lemon juice, cumin, chili powder and coriander in a food processor.
  • 2 add salt and pepper.
  • 3 process until smooth.
  • 4 adjust seasonings at this point.
  • 5 serve with belgian endive spears or veggies.
