Light Edamame Hummus

Ingredients
- Servings: 4
- 1 cup edamame, shelled
- 1/4 cup low-fat mayonnaise
- 1/4 cup low-fat plain yogurt
- 2 teaspoons lemon juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 tablespoon coriander, coarsely chopped
- salt and pepper
Recipe
- 1 place edamame, mayonnaise, yogurt, lemon juice, cumin, chili powder and coriander in a food processor.
- 2 add salt and pepper.
- 3 process until smooth.
- 4 adjust seasonings at this point.
- 5 serve with belgian endive spears or veggies.
