Ginger Cider

Ingredients
- 1 (64 ounce) bottle apple cider
- 2 cups pineapple juice
- 1 tablespoon grated fresh ginger
- 1 vanilla bean, split lengthwise
- 1 cinnamon stick, broken (3-inch stick)
- 6 black peppercorns
Recipe
- 1 stir together the first 3 ingredients in a large dutch oven.
- 2 scrape the vanilla bean seeds into the cider mixture; add vanilla bean pod, cinnamon stick pieces, and peppercorns.
- 3 bring to a simmer over med-high heat; decrease heat to low.
- 4 keep warm until ready to serve.
- 5 before serving, pour cider through a wire-mesh strainer into a serving bowl, discarding solids.
