Ginger Cider

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 (64 ounce) bottle apple cider
  • 2 cups pineapple juice
  • 1 tablespoon grated fresh ginger
  • 1 vanilla bean, split lengthwise
  • 1 cinnamon stick, broken (3-inch stick)
  • 6 black peppercorns

Recipe

  • 1 stir together the first 3 ingredients in a large dutch oven.
  • 2 scrape the vanilla bean seeds into the cider mixture; add vanilla bean pod, cinnamon stick pieces, and peppercorns.
  • 3 bring to a simmer over med-high heat; decrease heat to low.
  • 4 keep warm until ready to serve.
  • 5 before serving, pour cider through a wire-mesh strainer into a serving bowl, discarding solids.
