Island Smoked Chicken

Ingredients
- Servings: 4
- 4 (1/4 lb) chicken breast (approximately 1 pound)
- limeade
- 1/4 cup peanut oil
- 1 tablespoon minced onion
- 1/4 cup honey
- 1 teaspoon tarragon
- 1/4 cup wine
- 2 tablespoons alder wood chips
Recipe
- 1 rinse chicken and pat dry.
- 2 mix remaining ingredients and marinate chicken overnight.
- 3 when ready to cook, add alder chips to bottom of smoker.
- 4 remove chicken from marinade and pour 1/4 of the marinade into the prepared drip tray.
- 5 smoke for 25 minutes (on stove-top or on grill, following manufacturers instructions).
- 6 brush with a little marinade and grill or broil until crispy brown.
