Island Smoked Chicken

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 4 (1/4 lb) chicken breast (approximately 1 pound)
  • limeade
  • 1/4 cup peanut oil
  • 1 tablespoon minced onion
  • 1/4 cup honey
  • 1 teaspoon tarragon
  • 1/4 cup wine
  • 2 tablespoons alder wood chips

Recipe

  • 1 rinse chicken and pat dry.
  • 2 mix remaining ingredients and marinate chicken overnight.
  • 3 when ready to cook, add alder chips to bottom of smoker.
  • 4 remove chicken from marinade and pour 1/4 of the marinade into the prepared drip tray.
  • 5 smoke for 25 minutes (on stove-top or on grill, following manufacturers instructions).
  • 6 brush with a little marinade and grill or broil until crispy brown.
