Ingredients
- Servings: 4
- 1 lb dried navy beans
- 4 teaspoons olive oil
- 1 teaspoon salt (to taste)
- 1 teaspoon fresh ground black pepper (to taste)
- 1/2 cup ham, cubed (can use ham from deli)
- 4 garlic cloves, minced
- 1/4 lb thick slab bacon, cubed
- 4 cups water
- 1/4 cup tomato sauce
- 1 link chorizo sausage (spanish sausage)
- 1 medium onion, chopped
- 4 teaspoons vegetable oil
- fresh parsley leaves, for garnish
Recipe
- 1 soak beans overnight; change water one time, if you choose.
- 2 put beans in water, cook them until soft; drain.
- 3 in a frying pan, saute onion, bacon, garlic, sausage and ham in vegetable oil.
- 4 slowly add cooked beans, mashing them.
- 5 add tomato sauce, salt, pepper and olive oil; fry until crispy.
- 6 garnish with parsley.
- 7 serve hot with hot fluffy rice, ripe plantains and a nice green salad, and of course with cuban bread!
