Munyeta Recipe

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 lb dried navy beans
  • 4 teaspoons olive oil
  • 1 teaspoon salt (to taste)
  • 1 teaspoon fresh ground black pepper (to taste)
  • 1/2 cup ham, cubed (can use ham from deli)
  • 4 garlic cloves, minced
  • 1/4 lb thick slab bacon, cubed
  • 4 cups water
  • 1/4 cup tomato sauce
  • 1 link chorizo sausage (spanish sausage)
  • 1 medium onion, chopped
  • 4 teaspoons vegetable oil
  • fresh parsley leaves, for garnish

Recipe

  • 1 soak beans overnight; change water one time, if you choose.
  • 2 put beans in water, cook them until soft; drain.
  • 3 in a frying pan, saute onion, bacon, garlic, sausage and ham in vegetable oil.
  • 4 slowly add cooked beans, mashing them.
  • 5 add tomato sauce, salt, pepper and olive oil; fry until crispy.
  • 6 garnish with parsley.
  • 7 serve hot with hot fluffy rice, ripe plantains and a nice green salad, and of course with cuban bread!
