- 2 pounds ground lamb
- 2 large onions, chopped
- 1/2 red bell pepper, chopped

- 8 cups cold water
- 1 1/2 cups masa harina (corn flour)
- 1 cup strong brewed coffee
- 1/3 cup chili powder
- 3 tablespoons ground cumin
- 2 tablespoons garlic powder
- 2 tablespoons salt, or to taste
- 1 tablespoon oregano
- 1 tablespoon ground black pepper
- 1 (32 ounce) can chili beans
- 1 (32 ounce) can tomato juice
- 2 (8 ounce) cans tomato sauce
- 1 pound smoked sausage, diced
- 1/2 cup brown sugar

- heat a large pot over medium heat; cook and stir ground lamb, onions, and bell pepper until lamb is no longer pink, 5 to 7 minutes. season with salt to taste and drain.
- combine water, masa harina, coffee, chili powder, cumin, garlic powder, salt, oregano, and black pepper in a large bowl; stir until smooth. pour coffee mixture into ground lamb mixture and add tomato juice and tomato sauce; bring to a boil. stir in smoked sausage and brown sugar. cover and reduce heat to medium-low. simmer for 4 hours, stirring often.
