Leftover Turkey Enchiladas

Ingredients
- Servings: 12
- 2 turkey tenderloins
- 10 ounces red enchilada sauce
- 10 ounces green enchilada sauce
- 15 ounces black beans
- 12 small corn tortillas
- 1/2 red pepper
- 1/2 green pepper
- 1/2 red onion
- 20 ounces colby-monterey jack cheese
- pam cooking spray
- cumin
Recipe
- 1 spray baking pan with pam.
- 2 bake or grill the turkey london broils and cut turkey into thin slices.
- 3 cube peppers and onion into small pieces.
- 4 layer corn tortillas onto pan
- 5 sprinkle some red enchilada sauce.
- 6 sprinkle cumin on each layer.
- 7 layer on turkey, peppers and onions, cheese, green sauce, red sauce and more tortillas ending with cheese on top (like a lasange).
- 8 bake at 350 degrees for 45 minutes, covered and then uncovered at the end.
