Marinated Summer Slaw

Ingredients

  • Servings: 8
  • 12 ounces whole kernel corn, drained
  • 17 ounces baby peas, drained
  • 16 ounces french style green beans, drained
  • 4 ounces pimentos, diced and drained
  • 1 cup green bell pepper, diced
  • 1 cup celery, finely chopped
  • 1 medium onion, chopped
  • 3/4 cup vinegar
  • 1 cup sugar
  • 1/2 cup oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Recipe

  • 1 bring marinade ingredients to a boil while stirring occasionally. remove from heat and let cool.
  • 2 mix all slaw ingredients together in a large bowl. pour cooled marinade over the slaw. refrigerate overnight.
