Lenotre Pastry Cream

Ingredients
- 2 cups milk
- 1/2 vanilla bean, split and scraped
- 6 egg yolks
- 2/3 cup sugar
- 2 tablespoons flour
- 2 tablespoons cornstarch
- 4 tablespoons unsalted butter, softened
Recipe
- 1 bring milk and vanilla bean to a simmer.
- 2 meanwhile combine sugar, flour and cornstarch in bowl.
- 3 whisk until smooth.
- 4 add yolks and whisk until lump free and smooth.
- 5 temper egg mixture with milk.
- 6 pour egg mixture back into milk.
- 7 cook over medium low heat stirring constantly until it comes to a boil.
- 8 boil for 1 minute.
- 9 off heat stir in butter.
- 10 strain.
- 11 press plastic on top of cream to prevent skin from forming.
- 12 chill thoroughly.
