Lenotre Pastry Cream

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups milk
  • 1/2 vanilla bean, split and scraped
  • 6 egg yolks
  • 2/3 cup sugar
  • 2 tablespoons flour
  • 2 tablespoons cornstarch
  • 4 tablespoons unsalted butter, softened

Recipe

  • 1 bring milk and vanilla bean to a simmer.
  • 2 meanwhile combine sugar, flour and cornstarch in bowl.
  • 3 whisk until smooth.
  • 4 add yolks and whisk until lump free and smooth.
  • 5 temper egg mixture with milk.
  • 6 pour egg mixture back into milk.
  • 7 cook over medium low heat stirring constantly until it comes to a boil.
  • 8 boil for 1 minute.
  • 9 off heat stir in butter.
  • 10 strain.
  • 11 press plastic on top of cream to prevent skin from forming.
  • 12 chill thoroughly.
