Flour-free Falafel

Ingredients
- 1 3/4 dried garbanzo beans
- 2 garlic cloves
- 1 small onion
- 1 teaspoon ground coriander
- 1 tablespoon ground cumin
- 1 cup chopped cilantro
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon baking soda
- 1 tablespoon lemon juice
- canola oil, for pan frying
Recipe
- 1 soak chickpeas in 4 inches of water for 24 hours.
- 2 drain beans and transfer to a blender will all other ingredients. process until smooth, scraping the sides often. (add 1-2 tbsp water if necessary, but keep mixture as dry as possible).
- 3 heat oil to 350.
- 4 form mixture into balls or patties on each side until browned, not more than 5 minutes.
