Cumin Scented Black Beans And Quinoa

Ingredients

  • Servings: 4
  • 2 teaspoons vegetable oil
  • 1 red bell pepper, chopped
  • 1 1/2 cups chopped onions
  • 1 cup quinoa, rinsed
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried chipotle powder
  • 2 cups vegetable broth
  • 1 (16 ounce) can black beans, drained and rinsed

Recipe

  • 1 in a medium saucepan, heat oil. add pepper and onions; cook stirring for 5-6 minutes or until slightly softened.
  • 2 stir in remaining ingredients except beans. reduce heat to medium low and simmer 12-15 minutes or until quinoa is barely tender.
  • 3 stir in beans. fluff with a fork.
