Lentils With Chorizo & Red Wine

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 5 ounces green lentils or 5 ounces brown lentils
  • 3 onions, sliced
  • 1 garlic clove, crushed
  • 2 cups chicken stock
  • 2 teaspoons red wine vinegar
  • 3/4 cup red wine
  • 3 ounces chorizo sausage, roughly sliced
  • 1 tablespoon parsley, chopped
  • 2 sprigs thyme
  • salt and pepper

Recipe

  • 1 fry the onion and garlic in a little oil then add the lentils, red wine, stock, vinegar and thyme.
  • 2 simmer gently for 30 minutes until tender, add the chorizo for the last 5 minutes of cooking time. season with salt and pepper.
  • 3 stir through the parsley.
  • 4 serve with lots of crusty bread.
