Lentils With Chorizo & Red Wine

Ingredients
- Servings: 2
- 5 ounces green lentils or 5 ounces brown lentils
- 3 onions, sliced
- 1 garlic clove, crushed
- 2 cups chicken stock
- 2 teaspoons red wine vinegar
- 3/4 cup red wine
- 3 ounces chorizo sausage, roughly sliced
- 1 tablespoon parsley, chopped
- 2 sprigs thyme
- salt and pepper
Recipe
- 1 fry the onion and garlic in a little oil then add the lentils, red wine, stock, vinegar and thyme.
- 2 simmer gently for 30 minutes until tender, add the chorizo for the last 5 minutes of cooking time. season with salt and pepper.
- 3 stir through the parsley.
- 4 serve with lots of crusty bread.
