Lentil Salad

Ingredients
- Servings: 8
- 1 lb french lentils
- 2 sweet peppers, chopped, red, yellow, orange
- 1 purple onion, chopped, medium
- 1/4 cup fresh mint, chopped
- 4 garlic cloves, chopped (or to taste)
- 1/3 cup lemon juice, fresh
- 1/2 cup olive oil
- 6 ounces feta cheese, crumbled
- 1/2 cup fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon fresh cracked pepper
Recipe
- 1 boil lentils, cook only until al dente.
- 2 cool quickly in ice water.
- 3 mix all remaining ingredients.
- 4 marinate to allow flavors to blend.
