Lentil Salad

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 lb french lentils
  • 2 sweet peppers, chopped, red, yellow, orange
  • 1 purple onion, chopped, medium
  • 1/4 cup fresh mint, chopped
  • 4 garlic cloves, chopped (or to taste)
  • 1/3 cup lemon juice, fresh
  • 1/2 cup olive oil
  • 6 ounces feta cheese, crumbled
  • 1/2 cup fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh cracked pepper

Recipe

  • 1 boil lentils, cook only until al dente.
  • 2 cool quickly in ice water.
  • 3 mix all remaining ingredients.
  • 4 marinate to allow flavors to blend.
