Lentil Patties

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 1 cup brown lentils
  • 1/2 teaspoon turmeric
  • 1 small onion, finely chopped
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon thyme
  • breadcrumbs
  • oil (for frying)

Recipe

  • 1 boil lentils in pot of water until soft.
  • 2 beat egg, add salt, thyme, turmeric and chopped onion.
  • 3 add drained lentils, stir thoroughly and add sufficient breadcrumbs to make a fairly solid consistency.
  • 4 shape into rissoles.
  • 5 chill covered in fridge approximately 30 minutes.
  • 6 heat oil. fry until golden brown.
