Lentil Casserole

Total Time: 1 hr 25 mins Preparation Time: 15 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 2 cups beef stock
  • 1 cup green lentil
  • 1 celery rib, finely diced
  • 1 large carrot, finely diced
  • 1 garlic clove, finely minced
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1/4 teaspoon fresh black pepper
  • 1 tablespoon worcestershire sauce
  • 2 large onions, thinly sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/4 cup balsamic vinegar
  • 1 cup finely choped smoked sausage or 1 cup ham

Recipe

  • 1 combine first 9 ingredients in an oven proof casserole with a lid
  • 2 cover and bake in 350° f oven for an hour or until lentils are tender. check liquid from time to time and add a little water if necessary.
  • 3 in a separate pan saute onions in butter and oil until deeply carmelized.
  • 4 add balsamic vinegar to onions. stir together.
  • 5 when lentils are tender add onion mixture, and smoked meat and heat for 10 minute adjust seasoning to your taste.
