Lentil Casserole

Ingredients

- 2 cups beef stock
- 1 cup green lentil
- 1 celery rib, finely diced
- 1 large carrot, finely diced
- 1 garlic clove, finely minced
- 1 bay leaf
- 1 teaspoon thyme
- 1/4 teaspoon fresh black pepper
- 1 tablespoon worcestershire sauce
- 2 large onions, thinly sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup balsamic vinegar
- 1 cup finely choped smoked sausage or 1 cup ham
Recipe
- 1 combine first 9 ingredients in an oven proof casserole with a lid
- 2 cover and bake in 350° f oven for an hour or until lentils are tender. check liquid from time to time and add a little water if necessary.
- 3 in a separate pan saute onions in butter and oil until deeply carmelized.
- 4 add balsamic vinegar to onions. stir together.
- 5 when lentils are tender add onion mixture, and smoked meat and heat for 10 minute adjust seasoning to your taste.
