Four-bean Casserole

Ingredients

  • Servings: 8
  • 2 tablespoons extra virgin olive oil
  • 1 onion, chopped (medium)
  • 4 garlic cloves, chopped
  • 3 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1/2 cup tomato sauce
  • 1 teaspoon prepared mustard
  • 1 tablespoon chili powder
  • 1/2 teaspoon liquid smoke
  • 15 ounces baked beans
  • 15 ounces kidney beans, drained
  • 15 ounces black-eyed peas or 15 ounces garbanzo beans, drained
  • 15 ounces lima beans, drained

Recipe

  • 1 sauce: in a small skillet over medium heat, heat oil and saute onion and garlic until tender. add remaining ingredients and stir well.
  • 2 beans: in a 2-quart casserole, combine beans and sauce and bake at 350 for 45 to 60 minutes.
