Kale Soup

Ingredients

- 4 garlic cloves, minced
- 1/2 cup onion, chopped
- 3 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 10 cups fresh kale, chopped
- 14 ounces canned beans, rinsed and drained
- 2 tablespoons red wine vinegar
- 1/2 teaspoon sea salt
- 1/4 cup nutritional yeast
Recipe
- 1 heat oil and saute onions and garlic. add brown sugar, oregano and thyme and cook until sugar melts. add kale and heat until cooked down but not over soft. add beans, vinegar and salt. sprinkle nutritional yeast on before serving.
