Kale Hummus

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 4 cups kale
  • 1 (15 ounce) can garbanzo beans, rinsed
  • 3 tablespoons tahini
  • 2 garlic cloves, minced
  • 2 tablespoons agave syrup or 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, freshly ground
  • 5 tablespoons olive oil, divided
  • 2 tablespoons lemon juice
  • 1 teaspoon tabasco sauce (optional)
  • 1/2 teaspoon smoked paprika

Recipe

  • 1 trim all tough stems from kale and roughly chop.
  • 2 place the kale in a food processor or blender and pulse until pureed.
  • 3 add the remaining ingredients through hot sauce if used and blend, reserving 1 tbsp olive oil for dressing the finished hummus.
  • 4 dust with paprika if desired and serve with chips.
