Corn And Black Bean Salad

Ingredients

  • Servings: 4
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8 3/4 ounce) can corn, drained
  • 1 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 3 tablespoons chopped fresh cilantro (or if you don't like cilantro, parsley)

Recipe

  • 1 mix together balsamic vinegar, oil, lime juice, salt, sugar, black pepper, cumin, and chili powder in a medium bowl.
  • 2 add the black beans, corn, onion, and bell pepper to the bowl.
  • 3 toss gently with the dressing to coat, and garnish with cilantro.
  • 4 cover and refrigerate overnight, or at least 4 hours.
