Slow Cooker Quinoa Sweet Potato Chicken

Ingredients

  • Servings: 6
  • 2 (14.5 ounce) cans chicken broth
  • 2 1/2 cups chopped cooked chicken, or more to taste
  • 1 (28 ounce) can petite-cut diced tomatoes with garlic and olive oil
  • 2 (16 ounce) cans red kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 2 large sweet potatoes, peeled and cut into cubes
  • 1/2 cup quinoa
  • 1 tablespoon dried minced onion
  • 1 tablespoon chili powder
  • 1 teaspoon minced garlic
  • 1/4 teaspoon red pepper flakes
  • salt and ground black pepper to taste

    Preparation Time: 15 mins Cook Time: 8 hrs

    Ready Time: 8 hrs 15 mins

  • stir chicken broth, chopped chicken, tomatoes, kidney beans, black beans, sweet potatoes, quinoa, minced onion, chili powder, minced garlic, red pepper flakes, salt, and black pepper together in a slow cooker.
  • cook in the slow cooker set to low for 8 hours.
