Jamaican Jerk Shrimp Quesadillas

Ingredients
- 8 flour tortillas
- nonstick cooking spray
- 3 green onions, chopped
- 1/2 teaspoon cumin
- 1 1/2 cups mexican blend cheese
- 1/2 lb cooked shrimp, peeled and deviened
- salsa
- sour cream
Recipe
- 1 place rack in lowest position in oven.
- 2 preheat oven to 450°f.
- 3 arrange 4 tortillas on large foil lined baking sheet.
- 4 lightly coat the tortillas with non stick cooking spray; flip over.
- 5 sprinkle half of cheese over tortillas.
- 6 sprinkle with shrimp, green onion and cumin.
- 7 top with remaining cheese, then tortillas.
- 8 coat with non stick cooking spray.
- 9 bake on bottom racke in 450°f oven about 10 minutes, flipping halfway through.
- 10 cut into wedges.
- 11 serve with sour cream and salsa.
