Cumin Scented Black Beans And Quinoa

Ingredients

- 2 teaspoons vegetable oil
- 1 red bell pepper, chopped
- 1 1/2 cups chopped onions
- 1 cup quinoa, rinsed
- 2 teaspoons ground cumin
- 1/2 teaspoon dried chipotle powder
- 2 cups vegetable broth
- 1 (16 ounce) can black beans, drained and rinsed
Recipe
- 1 in a medium saucepan, heat oil. add pepper and onions; cook stirring for 5-6 minutes or until slightly softened.
- 2 stir in remaining ingredients except beans. reduce heat to medium low and simmer 12-15 minutes or until quinoa is barely tender.
- 3 stir in beans. fluff with a fork.
