Marinated Tofu Stir-fry

Ingredients

- 1/3 cup soy sauce
- 1/3 cup light orange juice
- 1 teaspoon five-spice powder
- 0.5 (8 ounce) package firm tofu
- 1 (8 ounce) can baby corn
- 1 (8 ounce) can water chestnuts
- 1 (16 ounce) package frozen stir fry vegetables
- 1 cup brown rice
Recipe
- 1 drain tofu on paper towels.
- 2 cube tofu into 1-inch chunks.
- 3 combine soy, o.j., and 5 spice powder.
- 4 add tofu and marinate in fridge overnight.
- 5 combine frozen veggies, corn, and water chestnuts in pan coated with cooking spray.
- 6 cook over medium heat for about 10 minutes. add tofu and marinade and cook until veggies are done- about another 7-10 minutes.
- 7 serve over warm rice.
