Marinated Tofu Stir-fry

Ingredients

  • Servings: 2
  • 1/3 cup soy sauce
  • 1/3 cup light orange juice
  • 1 teaspoon five-spice powder
  • 0.5 (8 ounce) package firm tofu
  • 1 (8 ounce) can baby corn
  • 1 (8 ounce) can water chestnuts
  • 1 (16 ounce) package frozen stir fry vegetables
  • 1 cup brown rice

Recipe

  • 1 drain tofu on paper towels.
  • 2 cube tofu into 1-inch chunks.
  • 3 combine soy, o.j., and 5 spice powder.
  • 4 add tofu and marinate in fridge overnight.
  • 5 combine frozen veggies, corn, and water chestnuts in pan coated with cooking spray.
  • 6 cook over medium heat for about 10 minutes. add tofu and marinade and cook until veggies are done- about another 7-10 minutes.
  • 7 serve over warm rice.
