Luscious Refried Beans

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • pan dripping, from a lamb roast (both fat and broth needed)
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1/2 chopped onion
  • 1 garlic clove, crushed and minced
  • 4 ounces cheddar cheese, processed or 4 ounces your favorite cheese

Recipe

  • 1 scrape 1 to 2 tbsp of the fat which has formed a layer on top of the drippings.
  • 2 melt the fat in a medium sized frying pan. (don't use a non-stick pan for this recipe, as you may damage the coating.).
  • 3 saute the onions and garlic in the fat until soft.
  • 4 add the beans and about 1/3 cup of the congealed broth. the broth will be the bottom layer, under the fat.
  • 5 mash the beans with a potato masher. get the mix as creamy as you want it. add more congealed broth if you want your beans soupier.
  • 6 then add the cheese and mix till it is melted.
  • 7 keep the beans firm if you are making burritos. make them soupy if you are using them as a dip. medium soupyness makes a great side dish.
  • 8 enjoy! these are some killer beans.
