Lentil Ground Beef Alternative For Veggies

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 3 stalks celery, finely chopped
  • 4 1/2 ounces red lentils
  • 1 (7 ounce) can tomatoes
  • 2 1/2 cups vegetable stock, made with a stock cube
  • 1 tablespoon soy sauce
  • 1 teaspoon dried herbs
  • salt & freshly ground black pepper

Recipe

  • 1 heat the oil in a large saucepan and cook the chopped vegetables for about 5 minutes over a medium heat until lightly coloured.
  • 2 add the remaining ingredients and bring to a simmer. cover and cook for about 20 minutes until tender and serve as wished.
