Lentil Curry With Spinach

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 4 teaspoons canola oil
  • 1 chopped onion
  • 4 chopped garlic cloves
  • 2 tablespoons grated fresh ginger
  • 2 teaspoons curry powder
  • 1/2 teaspoon red pepper powder
  • 1 cup dried red lentils (i have used french and regular as well without trouble)
  • 2 (14 ounce) cans vegetable broth
  • 2 1/2 cups water
  • 1 (10 ounce) package frozen spinach
  • salt

Recipe

  • 1 saute onions in oil till translucent, stirring frequently.
  • 2 add garlic, ginger, curry, and pepper flakes; cook stirring frequently till fragrant, about 1 minute.
  • 3 add lentils and veggie broth and water. simmer till tender, about 20 minutes.
  • 4 add spinach and cook until heated through. add salt to taste.
