Lentil Curry With Spinach

Ingredients
- 4 teaspoons canola oil
- 1 chopped onion
- 4 chopped garlic cloves
- 2 tablespoons grated fresh ginger
- 2 teaspoons curry powder
- 1/2 teaspoon red pepper powder
- 1 cup dried red lentils (i have used french and regular as well without trouble)
- 2 (14 ounce) cans vegetable broth
- 2 1/2 cups water
- 1 (10 ounce) package frozen spinach
- salt
Recipe
- 1 saute onions in oil till translucent, stirring frequently.
- 2 add garlic, ginger, curry, and pepper flakes; cook stirring frequently till fragrant, about 1 minute.
- 3 add lentils and veggie broth and water. simmer till tender, about 20 minutes.
- 4 add spinach and cook until heated through. add salt to taste.
