Lemon And Parsley Butter Beans

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 garlic clove, crushed
  • 2 (14 ounce) cans butter beans, rinsed and drained
  • 1 lemon, zest and juice
  • 1 ounce parsley, chopped

Recipe

  • 1 heat the oil in a pan, add the onion and cook for 10-15 mins until soft. add the garlic for the final minute, then stir in the beans to heat through.
  • 2 add the lemon zest and juice. stir in the parsley and serve.
