Cuban Potato Salad

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 lb small red potato, cut into 1/2-inch dice
  • 3 cups black beans, cooked
  • 2 bunches green onions, sliced
  • 1 cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 cup mayonnaise
  • 1/2 bunch fresh chives, thinly sliced

Recipe

  • 1 boil the potatoes in salted water until tender, about 10 minutes; drain, then combine with black beans in a small bowl. allow to cool.
  • 2 meanwhile, in a blender combine green onions, sour cream and lemon juice; puree until smooth; add salt, pepper and mayonnaise.
  • 3 blend until combined; pour over potatoes and beans.
  • 4 toss until well coated; garnish with chives.
