Mandarin Spinach Salad

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grainy mustard
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 4 cups baby spinach leaves
  • 1/2 cup bean sprouts
  • 1/4 cup almonds, sliced (optional)
  • 3 radishes, thinly sliced
  • 1 green onion, sliced
  • 1 (284 ml) can mandarin orange sections, drained and patted dry

Recipe

  • 1 in a large bowl, whisk together the oil, vinegar, mustard, salt and pepper.
  • 2 add the spinach, bean sprouts, almonds (if using), radishes, green onion and oranges.
  • 3 toss to combine.
