Ham And Bean Pasta Salad

Ingredients

  • Servings: 6
  • 1/2 lb ham
  • 16 ounces pasta
  • 1 bunch asparagus
  • 2 bell peppers, thinly sliced
  • 24 ounces great northern beans, drained and rinsed
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 on a large baking sheet, toss the bell pepper slices and asparagus with 2 tablespoons of olive oil. season with salt and pepper. roast for 10-15 minutes, stirring once during roasting.
  • 3 boil the pasta in a large pot with salted water until cooked, about 10 minutes. drain and add to large bowl along with ham and beans.
  • 4 make the dressing by whisking 1/2 cup of olive oil, red wine vinegar, salt, pepper and parsley together.
  • 5 when vegetables have cooled to the touch, chop into smaller pieces and add to the bowl with the pasta, ham and beans. pour the dressing on top and stir together.
  • 6 serve warm or refrigerate and serve cold.
