Creamy Black Bean Salsa

Ingredients

  • Servings: 12
  • 1 (15 ounce) can black beans, rinsed
  • 1 (8 3/4 ounce) box frozen corn kernels, thawed
  • 1 cup red bell pepper, finely chopped
  • 3/4 cup green bell pepper, finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons dried parsley
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper

Recipe

  • 1 in a large bowl, mix the salsa ingredients together.
  • 2 in a separate bowl mix the sauce ingredients together to make the sauce.
  • 3 pour the sauce over the bean combination.
  • 4 mix thoroughly.
  • 5 refrigerate for a couple of hours.
  • 6 serve with tortilla chips.
  • 7 enjoy!
