Creamy Black Bean Salsa

Ingredients

- 1 (15 ounce) can black beans, rinsed
- 1 (8 3/4 ounce) box frozen corn kernels, thawed
- 1 cup red bell pepper, finely chopped
- 3/4 cup green bell pepper, finely chopped
- 1/2 cup red onion, finely chopped
- 2 tablespoons dried parsley
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
Recipe
- 1 in a large bowl, mix the salsa ingredients together.
- 2 in a separate bowl mix the sauce ingredients together to make the sauce.
- 3 pour the sauce over the bean combination.
- 4 mix thoroughly.
- 5 refrigerate for a couple of hours.
- 6 serve with tortilla chips.
