Ingredients

- 6 -8 ounces dried lentils
- 8 cups water
- 1/2 cup olive oil
- 1 onion, quartered
- 1 cup chopped celery
- 1 tablespoon tomato paste
- 4 -6 cloves garlic, peeled
- 2 bay leaves
- salt and pepper
Recipe
- 1 rinse lentils and drain.
- 2 place all ingredients in a pot and bring to a boil.
- 3 reduce heat,cover and simmer for 2 hour.
- 4 remove bay leaves and adjust salt and pepper if necessary.
