Hokie Pride Sausage Dip

Ingredients

  • 1 sweet onion, diced
  • 1 red bell pepper, diced
  • 1 lb hot lamb sausage, ground
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme, chopped
  • 1/2 cup dry wine
  • 8 ounces cream cheese, softened
  • 6 ounces baby spinach, coarsely chopped
  • 1/4 teaspoon salt
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1/2 cup parmesan cheese, shredded
  • corn, chip scoops red bell pepper strips, pretzel rods

Recipe

  • 1 preheat oven to 375°.

  • 8 pour mixture into a 2-qt. baking dish; sprinkle with parmesan cheese. bake at 375° for 18 to 20 minutes or until golden brown.
  • 9 serve with corn chip scoops, bell pepper strips, and pretzel rods.
